Pumpkin Bundt Cake
To Bundt or not to Bundt? I Bundt! I absolutely love my Bundt pan and especially this Pumpkin Bundt cake. I have been making some variation of pumpkin cake for the past 10 years. My family looks forward to the pumpkin cake as the grand finale to our Thanksgiving dinner. This cake is dense but sooo moist. This year I topped the cake with a maple fudge frosting that was out of this world.

Ingredients
- 3 cups all purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 2 tsp pumpkin spice
- ½ tsp salt
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup vegetable oil
- 3 large eggs
- 15 oz can pumpkin (pure pumpkin not pie filling)

- 3 cups (600g | 1.3lb) light brown sugar
- 1-1/2 cups (360ml) heavy cream
- 2 tbsp corn syrup
- 1/2 tsp salt
- 1/4 cup (60g | 2.1oz) butter, softened
- 1 tbsp vanilla extract
Directions
- Step 1
- Preheat the oven to 350 ℉. Use baking spray to grease a 10 inch Bundt pan. Ensure that you get up the sides.
- Step 2
- In a medium size bowl whisk the flour, baking soda, cinnamon, pumpkin spice and salt. Set aside.
- Step 3
- In a stand mixer add the vegetable oil and the sugars. Mix for 1 minute on medium and ensure sugars are well blended.
- Step 4
- Add in the eggs one at a time, mixing after each.
- Step 5
- Add in the vanilla and pumpkin and mix for about another minute until all the ingredients are well blended.
- Step 6
- Slowly add the dry ingredients to the wet ingredients and mix on low until just blended.
- Step 7
- Pour the batter into the Bundt pan and spread evenly around the pan.
- Step 8
- Bake for 55 minutes or until a toothpick inserted into the middle comes out clean.
- Step 9
- Let the cake sit for 10 minutes on a cooling rack in the Bundt Pan and then flip onto the cooling rack to let cool completely before icing.
