Peanut Butter Caramel Bars
These bars have all the best ingredients, with oeey-gooey caramel, peanut butter, oats and chocolate chips. I just love this combination . The hardest part is waiting for them to set. I never knew how easy it was to make caramel sauce using only Kraft caramels and heavy cream. These bars don't require a mixer, which is one less thing to wash. Don't get me wrong I love my @kitchenaid stand mixer. Baking tip: remember these bars need to set or they will not stay together and there will be a caramel mess everywhere!

Ingredients
- Base:
- 1 ¼ cup all purpose flour
- 1 tsp baking soda
- ½ tsp. Salt
- 2 cups large flake oats
- 1 cup light brown sugar
- ¾ cup melted butter
- 1 tsp vanilla extract
- ½ cup smooth peanut butter ( I used natural smooth by Mumgry)
- 1 cup semi sweet chocolate chips or dark chocolate chips
- Caramel filling:
- 2 bags of 269g of kraft caramels
- ½ cup heavy cream
Directions
- Step 1
- Line a 9 inch square baking dish with parchment paper and set aside. Preheat oven to 350
- Step 2
- In a large microwavable bowl, melt butter. Stir in brown sugar until well mixed. Add vanilla extract and peanut butter.
- Step 3
- In the same bowl add flour, oats, baking soda and salt. Mix together until combined.
- Step 4
- Add about half of the mixture to the bottom of the baking dish and press down until smooth and even.
- Step 5
- Bake the crust at 350 for 8 minutes.

- While the crust is baking prepare the caramel sauce. Unwrap all the caramels and place in a microwave safe dish (I used a large pyrex glass measuring cup) and the heavy cream. Microwave on high for 30 second increments, stirring after each increment until completely melted and mixture is smooth.
- Step 7
- Once the crust is finished baking, pour the caramel sauce evenly over the bottom crust.
- Step 8
- Add the chocolate chips to the remaining peanut butter oat mixture and sprinkle the mixture of the caramel layer, gently pressing down.
- Step 9
- Place the pan back in the oven for 15 minutes, or until you see the edges are slightly browned. The caramel will be bubbling.
- Step 10
- Remove the bars from the oven and let cool in the pan for a minimum of 6 hours or best overnight. The bars need time to firm up or they will fall apart when you try to slice them.
- Step 11
- Bars keep for up to 1 week at room temperature or place in a freezer safe container for up to 3 months.
