No Bake Healthier Peanut Butter Bars
Chocolate, Peanut Butter and Krispies are such a good combination and really makes me feel weak. You know the feeling when you have lost all will power. The best part is that you don't have to feel completely terrible as they are made with natural peanut butter. In this recipe I used a natural peanut butter made by FATSO. It is definitely one to try and of course perfect for eating right off the spoon. This recipe requires few ingredients and not a lot of prep. The hardest part is waiting for them to cool in the refrigerator. If you make these be sure to tag me @pbonaspoon

Ingredients
- Base:
- 1 cup natural smooth peanut butter
- ½ cup honey plus 2 tbsp
- 1 cup crispy rice cereal (do not use puffed rice)
- 2 tbsp coconut flour
- Topping
- 6 oz dark chocolate (or semi- sweet if you prefer)
- 2 tbsp melted coconut oil
Directions
- Step 1
- Line a 9 x 9 or 8 x 8 (slightly thicker bar) baking pan with parchment paper.
- Step 2
- In a medium size microwavable bowl melt honey until bubbly. You can also melt honey in a pot on the stove.
- Step 3
- Add peanut butter, and stir. Stir in coconut flour and crispy rice cereal.
- Step 4
- Press mixture down evenly into the bottom of the pan and place in the refrigerator while you prepare the chocolate topping.
- Step 5
- Melt 6 oz of dark chocolate (I like 70% or above) and coconut oil in a saucepan or a microwavable safe dish.
- Step 6
- Remove the base layer from the refrigerator and pour melted chocolate over the base. Use the back of a spoon to smooth the chocolate evenly.
- Step 7
- Place the baking pan back into the refrigerator to firm up for 1 hour. Place score marks before slicing and be sure to wipe your knife clean between cutting pieces.
- Step 8
- Store in the refrigerator or place bars in a freezer safe container and freeze for up to 3 months.
