Double Chocolate Peppermint Pattie Cookies
York Peppermint Patties are one of my favourite after dinner treats during the holidays. The dark chocolate and mint combination is a classic holiday flavour that will give you that cleanse your palette` feeling. This Double Chocolate Peppermint Pattie Cookie is decadent with its addition of melted dark chocolate and pieces of York Peppermint Patties. Make them this holiday season as a new addition to your holiday baking.

Ingredients
- 1 cup softened unsalted butter
- 1 and ⅓ cup granulated sugar
- 2 tsp vanilla
- 2 cold eggs
- 2 oz melted dark chocolate
- 2 cups all purpose flour
- 1 cup sifted cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 package (200g) of York Peppermint Patties, cut into small pieces
- ½ cup semi-sweet or dark chocolate chips
Directions
- Step 1
- Line 2 cookie sheets with parchment paper or silpat or silicone baking mats and set aside.
- Step 2
- Cut up York Peppermint Patties into small pieces (1 pattie = 4 pieces) Set aside.
- Step 3
- In a microwavable chocolate Melt the chocolate in the microwave for 30 seconds and stir until completely melted
- Step 4
- In a medium size bowl add flour, sifted cocoa powder, baking soda and salt. Set aside
- Step 5
- In a stand mixer add the softened butter and sugars. Mix on medium-high for about 2 minutes.
- Step 6
- Add in the eggs and vanilla, mix on medium speed until well blended.
- Step 7
- Turn the mixer to stir and slowly add the dry ingredients until mixed completely.
- Step 8
- Add the York Peppermint Patties and melted chocolate and fold into the batter.
- Step 9
- Place the cookie batter in the refrigerator for at least 2 hours.
- Step 10
- Remove from the fridge and preheat the oven to 350 F.
- Step 11
- Use a medium size cookie scoop and roll the dough into balls. Place the balls about 3 inches apart.
- Step 12
- Bake for 10 minutes and remove from the oven to a cooling rack. Cookies can be stored in an airtight container for 5 days. Cookies freeze well.
