Chocolate Peanut Butter Crispy Bars
When it comes to summer, I tend to gravitate towards no bake recipes. What about you? These peanut butter and chocolate bars are just one of the ways you can enjoy life's best flavour combination of chocolate and peanut butter. What I love about this is that the peanut butter is already chocolate ! I know, YUM!!! Island Nut Roastery makes this chocolate peanut butter and I could honestly use it for so many recipes or my first choice, enjoy it right off the spoon!!! This recipe is gluten free and can be made vegan by swapping out the honey for maple syrup. These are going to be your new summer take along snack. Ingredients
- 1 cup Island Nut Roastery’s Chocolate Peanut Butter
- 1 tsp coconut oil
- ½ cup honey
- 1 and ¼ cup large flake oats
- 2 cups crisp rice cereal
- ½ cup mini chocolate chips
Directions
- Step 1
- Line a 8×8 or 9×9 baking pan with parchment paper.
- Step 2
- Microwave honey, Peanut butter and coconut oil and a microwave in 30 second increments, stirring between until bubbly. Let sit for a minute.
- Step 3
- Add large flake oats and crisp rice cereal and stir well.
- Step 4
- Add chocolate chips and gently stir in. Press mixture into the pan and smooth with a rubber spatula.
- Step 5
- Place in the refrigerator for 1 hour then remove and slice.
- Step 6
- Bars can be stored in the refrigerator for 1 week. I would suggest eating the bars the same day if you leave at room temperature.
- Step 7
- Bars can be kept frozen for up to 3 months.
