Peanut Butter Nanaimo Bars
These nanaimo bars just got an upgrade! That's right these decadent nanaimo bars have a smooth thick layer of PEANUT BUTTER!

Ingredients
- Base Layer
- ¼ cup cocoa powder
- ½ cup ground peanuts ( I used honey roasted)
- ½ cup unsweetened coconut
- ¼ cup maple syrup
- 2 Tbsp of coconut flour or sub ¼ cup of graham wafer crumbs
- 2 Tbsp of melted coconut oil
- Middle Layer
- 1 cup natural peanut butter- smooth or crunchy
- ¼ cup maple syrup
- 1 Tbsp of coconut flour or almond flour (custard powder would also work)
- Top
- 6oz of Dark chocolate
- 1 Tbsp tablespoon of melted coconut oil
Directions
- Step 1
- Mix base layer ingredients together and press into the bottom of a parchment lined loaf pan
- Step 2
- Place into the freezer while you prepare the middle layer
- Step 3
- Mix middle layer ingredients well and smooth over base layer
- Step 4
- Place back in the freezer
- Step 5
- Melt chocolate over the stove top or in a glass microwave dish
- Step 6
- If using the microwave, melt in 30 second increments until completely melted, stirring after each 30 seconds
- Step 7
- Pour chocolate over peanut butter layer and smooth
- Step 8
- Place completed bars back into the freezer for about 15 minutes
- Step 9
- Remove bars from the freezer and carefully slice using a sharp knife
- Step 10
- Wipe clean after each slice. Store in the refrigerator or freezer
