Sunbutter Zucchini Cups
These Sunbutter Zucchini Cups are a perfect nut free breakfast or snack, especially if you are on the GO! Sunbutter is a great nut free replacement for your family when preparing snacks for school and work. Even if you don't need a nut free snack I promise you will love Sunbutter!

Ingredients
- 1 cup shredded zucchini
- ½ cup maple syrup
- ½ cup Sunbutter
- 1 tsp vanilla extract
- 2 tbsp milk choice
- 2 cups large flake oats
- 2 tsp cinnamon
- 1 tsp baking soda
- ½ tsp salt
- ¼ cup melted coconut oil
- ¼ cup dark chocolate chips
Directions
- Step 1
- Preheat the oven to 350 degrees F. Grease a 12 count muffin tin.
- Step 2
- Mix all dry ingredients into a medium size bowl.
- Step 3
- Melt the coconut oil in a microwavable dish for about 45 seconds on high or until completely melted.
- Step 4
- In a separate bowl whisk the wet ingredients together.
- Step 5
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Step 6
- Pour the melted coconut oil and chocolate chips in and mix together.
- Step 7
- Using a medium size cookie scoop, place about 2 full size scoops into each muffin tin.
- Step 8
- Bake for 22 minutes.
- Step 9
- Remove from the oven and let sit for 5 minutes before removing cups from the pan to a cooling rack.

- Let cool completely.

- You can store leftovers in the fridge for up to a week or place in the freezer for an easy breakfast or snack on the go!
