Chocolate Chip Ice Cream Sandwiches
This reminds me of the giant ice cream sandwich cookies from Canada's Wonderland. Mmmmm!

Ingredients
- 1.5 cups all purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup softened butter
- ¾ cup brown sugar
- 2 tablespoons white sugar
- 1 egg
- 1 tsp vanilla
- 1 cup mini semi-sweet chocolate chips( for cookies)
- 1 cup mini semi sweet chocolate chips for rolling
- Vanilla ice cream of frozen vanilla yogurt (about 1 litre)
Directions
- Step 1
- Preheat oven to 350 degrees F
- Step 2
- Line two baking sheets with parchment paper or a sil-pat baking mat
- Step 3
- Using a stand mixer add softened butter and sugars and mix for 1 minute.
- Step 4
- Add egg and vanilla.
- Step 5
- Do not over mix wet ingredients.
- Step 6
- In a separate medium size bowl add dry ingredients and whisk. With the mixer on stir, slowly add dry ingredients to wet. Stir in the mini chocolate chips.

- Use a medium size cookie scoop and place cookie balls 2 inches apart on a lined cookie sheet (parchment or silpat mat).

- Bake for 8-9 minutes until the edges are slightly golden.

- Cool cookies on a cooling rack and transfer to the freezer for a minimum of 1 hour.
- Step 10
- Once the cookies are frozen, take out ice cream or frozen yogurt and let sit for 5 minutes.
- Step 11
- Scoop about ½ cup of ice cream onto the cookie and smooth. Ensure that the ice cream gets right to the edge of the cookie.
- Step 12
- Place the second cookie on top and take the knife around the cookie to make sure the ice cream is even around.
- Step 13
- You can add more ice cream to fill in the gaps so that it is solid, all the way around.
- Step 14
- Place the mini chocolate chips onto a plate and roll the ice cream edge into chips.
- Step 15
- Wrap finished cookies into plastic wrap and freeze until ready to serve.
- Step 16
- Let sit for 5 minutes at room temperature when ready to serve.
