Soft Peanut Butter Kiss Cookies
These pillow- soft peanut butter kiss cookies look adorable and have the perfect peanut butter taste. The chocolates make their statement with their black stripes on the white Hershey Kiss, also known as `hugs`. You could use any Hershey Kiss but I prefer the look of these. I think everyone needs some hugs and kisses and I couldn’t think of a better way!

Ingredients
- 2 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs at room temperature
- 1 2/3 cup regular peanut butter (not natural)
- 1 tbsp vanilla extract
- 60 hershey kisses- hugs flavour (about 1 bag 400g)
Directions
- Step 1
- Line 2 cookie sheets with parchment paper or silicone baking mats.
- Step 2
- In a medium size bowl add the flour, baking soda and salt. Whisk and set aside.
- Step 3
- In a mixer with a paddle attachment (or handheld mixer) add the softened butter and sugars. Mix on a medium speed for one minute.
- Step 4
- With the mixer running on low add the eggs, peanut butter and vanilla. Mix until ingredients are mixed all together.
- Step 5
- Place dough in a covered dish in the refrigerator for 2 hours to chill. While the dough is chilling, remove wrappings from Hershey kisses and set aside.
- Step 6
- Remove dough from the refrigerator and let sit for 15 minutes. Preheat oven to 350℉
- Step 7
- Use a medium size cookie scoop and then roll dough into balls. Place the cookies on the lined cookie sheet about 3 inches apart. Using your finger gently press into the middle of each cookie. Just enough to leave a slight impression where you will place the Hershey Kiss.
- Step 8
- Bake for 10 minutes, remove from the oven and immediately place a Hershey Kiss into the middle of each cookie. Let sit for 2 minutes on the baking sheet then remove to a cooling rack to completely cool.
- Step 9
- Store cookies in an airtight container for up to 5 days or place cookies in the freezer safe container in the freezer for up to 3 months.
