Penny Pie
Be a Penny ❤️❤️❤️ So what’s in the name? This luscious no bake cheesecake is simple to put together and a crowd pleaser. Do you have memories of your favourite desserts from family gatherings? Well this was mine!! My Aunt Penny used to make a no-bake whipped cheesecake every Christmas or gathering and I would rush through my dinner to get to this dessert. It was heavenly! The problem was this dessert was only seen at the holidays. I needed it more, so……. I decided to re-make this dessert for my own family and I call it ‘Penny Pie’. Well I correct myself, WE call it Penny Pie. 😋. Make this pie and be a Penny ❤️

Ingredients
- 4 cups graham cracker crumbs
- 1/2 cup unsalted butter
- ¼ cup granulated sugar
- 500ml whipping cream
- 2 blocks cream cheese- softened
- ½ cup icing sugar
- 1 tsp vanilla extract
- 2 cans, 473 ml canned cherry pie filling
Directions
- Step 1
- You will need 2 8 inch pie dishes or a 9 x 13 inch baking dish
- Step 2
- Melt butter and mix with graham cracker crumbs and sugar
- Step 3
- Divide evenly into two 8 inch pie dishes or place all into a 9 x 13 inch baking pan
- Step 4
- Press the crust evenly around the pan and up the sides of the pie dish
- Step 5
- Refrigerate the crust while you prepare the filling
- Step 6
- In a stand mixer with a whisk attachment pour the whipping cream in and whisk on medium- high for about 2 minutes until soft peaks form.
- Step 7
- Remove whip cream and place in the refrigerator.
- Step 8
- In the stand mixer with a paddle attachment add softened cream cheese and sugar and mix on high for 2 minutes until there are no lumps and mixture looks smooth. Add in the vanilla extract and mix.
- Step 9
- Slowly fold in whipping cream to the cream cheese mixture until completely mixed together.
- Step 10
- If you are making two pies, split the cream cheese mixture in half and spread on top of the crust.
- Step 11
- Top each pie with one can of 🍒 Cherry pie filling.
- Step 12
- You can serve immediately! Store leftovers in the fridge covered for up to 5 days. Do not freeze.
