Peanut Butter Granola Cups
Meet your newest FUN snack! These peanut butter granola cups are made using similar ingredients to my peanut butter granola. What I love about the cups are how creative you can get filling them! My kids went crazy filling their 'cup'. My favourite way was a large spoonful of my favourite natural peanut butter and sprinkled with dark chocolate chips. You could use yogurt and sliced fruit or even ice cream! How will you fill your cup?

Ingredients
- 1 cup peanut butter (natural drippy preferred)
- 1/2 cup honey
- 3 cups old fashioned large flake oats ( must be large flake)
- 1 teaspoon of cinnamon
- 1/4 ground flax
- 1 tbsp chia seeds
- 1/4 cup sunflower seeds
- Optional add-ins: yogurt, milk, ice cream, peanut butter, sliced fruit, chocolate chips
Directions
- Step 1
- Preheat oven to 300 F. Grease a 12 count muffin tin.
- Step 2
- Mix peanut butter and honey together in a microwave safe bowl. Put in microwave for 30 seconds, stir and repeat until bubbly.
- Step 3
- Stir oats, cinnamon, flax, chia and sunflower seeds into the peanut butter mixture and stir until all ingredients are well coated.
- Step 4
- Use a large cookie scoop and slightly overfill the scoop with the granola mixture. Place into the muffin cup and use your fingers to press the mixture down the middle and up the sides, ensuring you get the granola mixture all around.
- Step 5
- Place in the oven and bake for 18 minutes.
- Step 6
- Remove from the oven and place pan on a cooling rack. Let the pan sit or 5 minutes. Using a butter knife, gently run it down the sides of the cup to help loosen the edge. Gently lift the granola cup out and place on the cooling rack until completely cool.

- Add your favourite filling to the cup and enjoy!
