Maple Pecan Scones
I love maple syrup season. Although not officially a season, when Spring comes along I start thinking about baking with maple syrup. These maple pecan scones are perfect pairing with your morning coffee or tea. They also make a great addition to any brunch. Scones don;t need to be scary. I highly recommend grating the frozen butter with a box grater ( I used the larger grater on my cheese grater). Some great tools to make these scones: pastry cutter and wheel for cutting. Ingredients
- 2 cups all purpose flour
- 1 tbsp baking powder
- ¼ cup brown sugar
- 6 tbsp frozen butter
- 1 egg
- 1 tsp maple extract
- ¾ cup heavy cream plus 2 tbsp
- ⅔ cup chopped pecans
- Maple Glaze
- 2 tsp maple syrup
- 1 tsp maple extract
- 1 tsp water
- 1 cup powdered sugar
Directions
- Step 1
- Line a large baking sheet with parchment paper. Preheat the oven to 400℉.
- Step 2
- In a medium size bowl whisk flour baking powder and sugar together.
- Step 3
- Take the frozen butter and grate the butter into the flour mixture. Use two forks or a pastry cutter.
- Step 4
- In a separate bowl add the egg, maple extract and heavy cream and whisk together.
- Step 5
- Pour the wet ingredients into the flour mixture and stir until completely combined. Add in the chopped pecan pieces.
- Step 6
- Place the dough onto a floured work surface and use your hands to shape into a large circle about 8 inches.
- Step 7
- Use a pastry cutter or sharp knife to cut into 8 scones.
- Step 8
- Transfer scones to a parchment lined baking sheet. I like to use a rimless baking sheet for scones. Brush the tops of the scones with heavy cream before baking.
- Step 9
- Bake for 15-17 minutes at 400℉ until edges are lightly browned.
- Step 10
- Remove scones from the oven and let cool while you prepare the maple glaze.
- Step 11
- In a small bowl whisk all the ingredients together and drizzle over the cooled scones. I reserved a few chopped up pecans to sprinkle on top as well.
- Step 12
- Scones will keep at room temperature for about 2 days or up to 5 days refrigerated.
